Buzzwords for 2010

*True Neapolitan pizza is hard to find. By definition (according to the Verace Pizza Napolitano association in Naples), it requires a wood-fired oven and buffalo milk-based mozzarella along with dough made only with finely ground (doppio zero) flour, shaped by hand with simple, fresh ingredients. Once you’ve had it, though, there is truly nothing like it. Here is a list of some of the best on the west coast. Be prepared to wait in line.
